Se recomienda poner agua abundante para que se rehidraten bien.<\/p>\n<p>Al d\u00eda siguiente se escurren y se ponen en una cacerola con la morcilla, los dos chorizos y la panceta, se cubre de agua fr\u00eda y se lleva a ebullici\u00f3n. Si sale espuma cuando comience a hervir, se retira con una cuchara.<br \/>\n<!--more--><br \/>\nSe dejan cocer lentamente, un poco destapadas, procurando que est\u00e9n siempre cubiertas de agua para que no suelten la piel, a\u00f1adiendo vez en cuando agua fr\u00eda en peque\u00f1as cantidades.<\/p>\n<p>Debe vigilarse bien la cocci\u00f3n, sacudiendo la cacerola (nunca moviendo con una cuchara sino agitando la cacerola agarrada de sus asas) para que no se peguen en el fondo. Se dejan cocer hasta que est\u00e9n tiernas.<\/p>\n<p>Ese hasta que est\u00e9n tiernas depender\u00e1 de c\u00f3mo las hag\u00e1is. Si las hac\u00e9is en olla r\u00e1pida, estar\u00e1n perfectas en 18 o 20 minutos. Pero si las hac\u00e9is de verdad, a fuego lento en una cacerola semidestapada, ser\u00e1 cuando queden perfectas de verdad. Adem\u00e1s, para que est\u00e9n en su punto, las pod\u00e9is ir probando de cuando en cuando. El proceso puede durar entre 2 horas y media y 3 horas. <\/p>\n<p>Llegado ese punto, se prueban de sal y se dejan reposar.
